Person in charge will contact corporate to provide updated labeling; Violation: Observed meat worker stack or “shingle” meat trays onto raw meat already dispensed prior to wrapping. This could contaminate the meat from dust from the bottom of the meat trays. Discussed issue with person in charge; Violation: Corrected during inspection — Observed boxes of single-service cups stored on the floor in the back storage area of Tienda Del Oso. All food-related items must be kept off of the floor at all times. Boxes were moved off of the floor; Violation: Equipment and/or components not maintained. Middle meat chest cooler must be repaired and checked by a health inspector prior to use. Front bottom of the open air produce cooler is insufficient. Unit should be adjusted and checked by a health inspector prior to placing product at load limit again; Violation: Observed that there was not a drop ceiling or similar smooth ceiling over the produce prep area. Walls and ceilings in several areas of the grocery store back storage area were not smooth and easily cleanable. Observed that the ceiling tiles over the food island in Tienda Del Oso are not smooth and easily cleanable; Violation: No protective shielding on lights.

Eggs were moved to the bottom shelf during the inspection; Violation: Critical — Food equipment surfaces not cleaned at required frequency. Sanitarian pointed out the dirty beverage racks in the walk-in cooler to person in charge. She was instructed to clean them as often as necessary to keep them clean; Violation: Critical — Corrected during inspection — Items in the walk-in cooler were observed to be between 44-45 degrees F. Sanitarian had person in charge remove all TCS food items from the walk-in cooler that were above 41 degrees F and move them to a different cooler to reduce the temperature of food items to 41 degrees F or below; Violation: Facility does not have a person with level two certification in food protection. Spoke with person in charge about possibly dropping to a risk level 2 license next year since they only conduct level 3 activities for a few months of the year. If they decide to drop to a risk level 2, there will not be a requirement for a Level 2 food safety training; Violation: Food thermometers are not accurate. Get new thermometers to hang in walk-in cooler that are accurate.

Person in charge advised they are out of paper towels. Person in charge’s friend went to grocery store and got more paper towels; Violation: Corrected during inspection — Observed that men’s restroom does not have handwashing soap. A trip to the grocery store was made by person in charge’s friend and soap was obtained and placed into men’s room; Violation: Sanitizer test kit is water damaged and expired in 2013. Obtain and use new quaternary ammonia test strips.
