Corrected at time of inspection — Chicken was moved to the bottom shelf in the walk-in cooler; Violation: Critical — Repeat — Observed that the cappuccino machine mixing tubes have a build-up of food debris. Corrected at time of inspection — Cappuccino machine parts were taken off for washing; Violation: Critical — Improper use of non-continuous cooking. Observed partially cooked chicken in the walk-in cooler. Person in charge advised that a non-continuous cooking procedure is used for this food item so that chicken moisture is retained. Chicken will be cooked again before service. This procedure can be allowed, but a plan must be in place and approved to ensure that food is handled safely throughout preparation, marked so as not to be confused as RTE, and stored separated from RTE foods. Facility may either submit plans as described above or may discontinue non-continuous cooking processes. Corrected at time of inspection — Foods were marked as not fully cooked and moved to the bottom shelf; Violation: Critical — Observed milk and cream cheese in the reach-in cooler that measured over 41 degrees F. Cooler sliding door had been left open since earlier this morning when it was loaded with product. Corrected at time of inspection Items found above 45 degrees F were disposed. Milk found at 45 degrees F or below was kept and moved to the walk-in cooler to cool back down as the cooler door re-cooled with the door closed; Violation: Critical — Repeat — RTE, time/temperature controlled for safety (TCS) food not properly discarded when required. Corrected at time of inspection — Foods were voluntarily disposed; Violation: Repeat — Facility does not have a person with level two certification in food protection. Person in charge was scheduled to take a class at health department but class was cancelled. Class can be taken on line and then proctored in person; Violation: Repeat — Bulk food for customer self-service not properly labeled. Observed a spray bottle of liquid without a label. Staff advised that this is water for pretzel salt and that the permanent marker is frequently washed off. Corrected at time of inspection — Spray was labeled was water; Violation: Repeat — Observed single-service cups in a box on the floor by the dry storage area. Items must be at least six inches above the floor. Move boxes onto crates or shelves; Violation: Repeat — No protective shielding on lights. Obtain new light bulbs for units that are shatterproof or otherwise shielded.
